1 ½ cups basmati rice (soaked in water for 30 minutes and drained)

3-4 green cardamom pods
4-5 whole cloves
1 bay leaf
1 tsp cumin
1 tsp ginger-garlic paste
2 cups water
3 cups vegetable or chicken broth (hot)
2-3 tbsp ghee or vegetable oil
salt to taste

fried onions (optional)
Heat ghee or vegetable oil in a large, heavy-bottomed pot or pressure cooker over medium heat. Add cumin seeds, cinnamon stick, green cardamom pods, cloves and bay leaves. Fry for a minute or till the spices release their aroma.
Now add finely chopped onions and green chillies to the pan. Fry the onions till they turn golden brown, stirring occasionally so that they cook well.
Next, add ginger-garlic paste and cook for another minute till the raw smell disappears.
Add fresh green peas and cook for a few minutes. If you’re using frozen peas, there’s no need to thaw them beforehand.
Pour the soaked and drained basmati rice into the vessel, mix gently with the spices and peas. Cook for a minute so that the rice absorbs some of the flavour.
Add hot vegetable or chicken broth and water and add salt to taste. Shake everything well.
If using a pressure cooker, close the lid and cook on medium heat till one whistle, then lower the flame and let it cook for 5 minutes before turning off the flame. If using a regular vessel, cover it with a tight-fitting lid and let the rice cook on a low flame till it is fully cooked and puffed up.
Once the rice is cooked, leave it like this for a few minutes, then gently fluff it with a fork to separate the grains.
